I thought I would share this with everyone that just wasn't sure if it would hold up in the IR heat from TBE.

 I do not remove the plastic truss thing that the turkey campiness are now putting in the turkey so you don't have to tie the bird. I've cooked several turkeys with it using my big easy and never had an issue. I'm not talking about the plastic pop up thermometer that comes with most birds. That thing I will remove and use the hole with a real one.

I leave them in place when I smoke a bird (up to 350) with no issues.

Good to know. I threw mine away the other day because I thought the heat would melt it. Should've asked!

I leave it on because I roast the bird vertical.

Great idea for regular roasting, beats tying it.
