Breakfast the morning after Thanksgiving

We're having a wonderful Thanksgiving break, full of good food, good company, and alone time.  This morning, food in the form of what might be called IdaMex nachos.

... potatoes, baked, sliced, and crisped on cast iron

... adding the black bean and pork we cooked the other day, topped with melted cheese

... then topped with a runny yolk egg (just had to do it, David)

Good vittles!  My post-Thanksgiving breakfast includes a generous slab of stuffing that I baked separately from the turkey.  I slice it thinly and saute it in a little butter  ;D
