I did work up an appetite today; had 8 inches of snow to blow out of the driveway and about a foot outback to shovel. I have to shovel enough out back so the dog can keep his equipment out of the snow!
We had a few warmer days and got some cooking done on the smoker. It will be back to the teens for seven days so will be cooking inside again for a while.
I didn’t buy any salsa at the grocery and had two cans of tomatoes so made some fresh salsa. I know out of the can but they taste fresher than hot house from the grocery. I did 4 or 5 pulses in the food processor to get the tomatoes chopped up. I added some small diced celery and green pepper and some sliced onions, cumin, lime juice, hot sauce and a touch of olive oil. I placed in the fridge several hours to all get happy.
I did a cup of rice in my rice cooker and when it went to warm hold I added a can of vacuum packed corn and some sautéed onions, peppers and asparagus, salt, chili powder and cumin. I kept that on warm while I did the chicken for the tacos. I used a packet of McCormick’s seasoning for chicken tacos.
I made up the tacos for the wife and me; chicken, Mexican cheese, salsa, lettuce and sour cream. We had some salsa on the plate that tasted good mixed in with the rice. I forgot the avocado I had for me, the wife doesn’t like it. I have plenty of leftovers to give the son and family and our supper tomorrow night. The Shiner beer id good! It all tasted pretty darn good and sorry Smoke I didn’t have green salsa for you!
