Hello from Miami, FL

Hi, my name is Wil and I have a problem. I purchased a PBC a couple of months ago and now I am completely addicted to it. No Joke! I can barely sleep now the day before a cook!

My cooking history: I've been grilling for over 20 years and BBQing for the last 3 or 4. I started out cooking on gas grills until a friend of mine who was moving back to Maine gave me his Weber Kettle about 5 years ago. A year later I threw out the gas grill and a year after that I bought a smokenator, with that combo I've turned out some pretty good food. But now I have a PBC and it has taken everything to a whole new level!

Thanks everyone. Here are a couple of pics from prior cooks.
Boneless pork butt from a couple weeks ago. Never crutched it, moved to grate at 160 and took off at 200. Came out incredible.

Wings from this past Saturday. Cracked lid at the end to crisp them up but may have wait a minute or 2 too long to take them off.
