ABC Reverse Sear Porterhouse Steaks

Using the reverse sear method from ABC BBQ I did a couple of porterhouse steaks for Mr. and Mrs. RAD yesterday.

Overnight Dry Brine

Low and slow until it reached 118. Pulled pat dry add some EVOL and Black Crack Pepper

This one picked up a mahogany color for some reason and looked so much better, so that one went to Mrs. RAD

Sure post these and all I got for the 4th was fried catfish  ;) :D :D :D    I do love fried catfish though, but not as much as STEAK!!!!!!!!!!!!!!!!!!!!!

LOL Tommy All I got is Turkey Dogs, Frozen Pizza & Gold fish. Dealing with family sickness again....Lost this 4th

Anyway I agree IMO there is nothing as good as steak & those were as good as it gets......I would fight the dog for the bone.

Mine haven't turned out like that, but I'll bet the next ones will.

Dry brine overnight, indirect to 118, dried off and seared.  Oh. Yeah, that's gotta work.
