Howdy y'all,

I am originally from West Texas but live in Alabama now.  I am not totally new to BBQ but I am new to pellet smokers.  I like smoking brisket, pork butts, chuck roasts, ribs, and chicken wings.  I haven't had a chance to do a whole lot of smoking for a few years because of work and family, so the pellet smoker looks like it will fit my schedule, even though I really like stick burners.  I enjoy testing new recipes and methods of BBQ and am mostly satisfied with the main products I smoke, just gotta work on the sides a bit.

Nor sure what you did to live in the diaspora of Alabama.....but I am stuck in North Carolina. It's not too bad....I found a translator, and married her. But, hoping to fi d another place somewhere little  north of San Antonio...Hope you can make a good brisket. Hard to come by in the South East. And impossible to get a real Chicken Fried Steak. But it is survivable if you work at it.... ;)  :D

I am in Northern AL, just north above Huntsville.  I can make a pretty good brisket I keep it simple, just salt and pepper, low and slow.  Have had some hot and fast brisket, but prefer the low and slow, just don't have the time to tend to a stick burner fire.
