Title: Winner Winner Chicken Dinner

Wife says we haven't been eating very healthy lately and wanted a healthier dinner tonight. Easy. Or should I say the Big Easy.

Chopped up some zucchini, onion, and carrots. Also got some boneless skinless chicken breast. All seasoned with fresh Italian herbs and placed in the basket.

Pulled veggies then let chicken finish roasting.

Food looks great.  I always thought chicken should be cooked on the lower racks. No bad juju dripping on your veges.

Understand your concern. Makes sense. I'm no expert however I have cooked chicken over veggies many times with no ill effects. Also seen many recipes calling for the same.

I cook chicken over spuds,veggies and even dressing with no issues

Just bring whatever you cook up to temp before serving and you will be good

I also am a bit concerned about the chix drippings but if it has worked for you before then so be it. I bet those veggies are packed full of flavor that way.
