bacon wrapped chicken breast, added video

Have any of you guys tried bacon wrapped chicken breast or tenders?  I am thinking about making them tomorrow for a friends gathering.

Should I use the grill or put them in the chamber?

How do you guys prep them?

I brine the chicken for a few hrs then wrap bacon around them, place in the basket (use half racks) then cook till 160 to 165 IT

Sauce them after I pull them out and let them rest

Bacon Wrapped Chicken Tenders

marinated in Italian salad dressing and a little Montreal Chicken seasoning
in the fridge over-night



wrapped in a piece of thin bacon
with a little more Montreal Chicken seasoning sprinkled on



wood chips and a chunk of hickory below the grill



what can I say, everything goes better with BACON !!

hmmm. think I am going to do the chicken tenderloins in bacon.  Any difference between in the rack vs grill?

Man, those look good!  Have used Italian dressing for marinating chicken for years.   Wishbone now has one I also like.--Greek Vinagarette salad dressing.    Equally as good and just enough different you know it.

I picked up 25 tenders,  going to marinate them in balsamic vinaigrette tonight. and wrap them tomorrow.

CJ, how did you know the tenders were done?

they should actually crisp the bacon a little better in the rack of the BigEasy

ok going to use the rack .....I actually have a lot left over, so I will grill those.  Get to compare them.

Also I am cooking till 160 right?

Anything is good wrapped in bacon. 160-165 and then yank em.  I did a entire de-boned chicken once wrapped in a bacon weave. I called it "Oiken-Cluck"

so I did it both ways on the grill and on the rack.  the bacon did not get very crispy in the rack, I eventually had to regrill them to get the bacon crispier.  It might of been because I put too man or put the tenderloins too close together.  I will post a video later.

Regardless they were darn good.  Again a bit dry, for me, but everyone at the party loved them.
