best beef roast

Need some advice...after successfully cooking ribs, fish, pork, steaks, etc., I’m ready to tackle a beef roast. I’ve poured through the search feature to no avail. It seems like most Big Easy-ers would lean towards a prime rib roast. My family is less keen on fattier cuts, so I was wondering if the experts here have a standard “go-to” when it comes to roasting. I have hickory and mesquite pellets that need to be used, and I assume a 5lb or under roast would suffice.

I’d appreciate any opinions….

Tri Tip or sirloin roast work great.  If cooking with an SRG or BEESR cook on low till and IT  of 115 then turn it to high (SRG) or setting 15 (BEESR) til done.  if cooking with a TBE cook till IT of 125 then FTC for an hour.  Really good stuuf

Salt and Pepper is all you will need unless you want to add more flavor

I would also recommend a New York Strip roast and follow Tommy's methods for cooking it. ;)

Never heard of a NY strip roast?   Then again never heard of a Tri-Tip til a few years back

I second the NY Strip loin suggestion.  You can cook it just like you would a rib roast.  I actually prefer them over a prime rib. You will probably have to find a butcher and ask for a strip loin roast.

You can do one of these on that new Rec Tec, low and slow, and you'll get fantastic results.  ;)
