Looks very nice Ahron. When I have done bacon I cold smoke for a couple of hours in my pellet grill and then set the temp to 165 until it reaches an internaltemp of 145 to 150. I think going up to 200 degrees is a little hot but if you pull it at those temps it will work. I am by far no expert on homemade bacon and I am sure that the experts will be along to comment.
