Shopping for meat to prepare as recipe photographs the other day and glanced into the "managers special" bin at my local (regional) food store. Generally speaking these are slim pickins about the mid-day time I arrived. There were the usual selection of semi-green colored mystery meat and then I saw a 2.2lb roast labeled "Petite NY Strip Roast" and darned if it wasn't. Had two $3 off stickers and that brought the price down to $6 a lb...seemed worth the gamble.
It was wrapped in butcher netting and I left it on, although it was one cut and not likely to fall apart. Seasoned with fresh ground sea smoked salt and black pepper, set up the SRG with the half-shelves at different heights and leaned it almost vertical, turned on the cooker and walked away for 20 minutes - check with Yellow Splashproof Thermapen (fastest, btw) and it was about 80°F internal, left it for another 10 and it was about 110°F - pulled and rested. Removed netting and sliced into medallions for service. Here's what they/it looked like.
