I've been wanting to make Osso Buco. Will this work?

I Know Tim loves to use Ox Tail for making Osso Buco.

The butcher was out of regular Ox Tails, and this was the next best thing they had...


Will it work?  My biggest concern is the carb count.

The Turtle (Ka Honu) might also be able to shed some light on this quandary!

Since Cow Tales are sorta defined as vaguely bone-shaped filled cylindrical thingies named for a part of a cow, I guess they might work (at least in Tim's altered universe).

Ox tails? Cow tails? I have had both with fine experiences. But I must say the cow tails are much sweeter, must be a male/female thing!! :D
