Made a boneless rib eye tonight. Did a dry brine for a few hours, then made a wet marinade and for the life of me can't remember what I used. It was sort of a mad scientist use what's in the fridge kind of mix. I wish I remembered it was outstanding. Let it marinade for a few more hours then dried it off and coated with heavy cracked black pepper. Put over screaming hot coals and some flaming chunks of hickory

It actually came out brighter red in the photo for some reason lol. It didn't look that red. God was it good

Kind of wish I had done steaks after seeing this.... We just had left over ribs from earlier this week.... cleaning out the fridge day !

Nope the coal bed was in the normal location. I let the coals get screaming hot then throw a few chunks of hickory right on top. I wait till the wood flames up then the steak goes on. I like the wood flavor it adds as well plus gets a little bit of that flame kissed char :)

Haven't steak for weeks, Seeing that makes me think I'll be visiting Sams club for some Ribeye. Looks Great! :)
