I just read an old post that Tee asked for my secret recipe for homemade noodles. Well, here it is.
4 warm eggs, I let sit out overnight
3.5 cups flour, whatever kind you like or a combo
pinch salt
1 tablespoon of oil, not Olive Oil -optional
mix all together in KitchenAid or by hand. Roll thin and stack with flour between layers, then cut with pizza cutter or use KitchenAid cutters. Very easy and fast, and you can't beat the flavor. Cooks very fast if fresh or you can dry them with some flour to keep them from sticking. When dry put in ziploc bag and in freezer.
You can add spinach or beets or anything, just puree first and add some more flour.
