Had a BIG craving for fried rice but can't have it because of the carbs. So I got to thinking why not use spaghetti squash cut up into small pieces like rice and stir fry them.
Well here is my version of Low Carb fried rice :thumbup:
I use 2 Tbs of soy sauce, soaked 1 Tbs dried onion then cut up squash into fine bits like rice. Next I cut little chunks of chicken and stir fried them in sesame oil then add a few drops of soy sauce to flavor. I removed the chicken pieces when they were done and added the squash/onion/soy mixture and stir fried it for a few mins. Then I added the chicken back turned the heat to high and finished to a semi dry texture (kinda like rice a roni)
Really turned out well

Great IDEA!! I'll bet it was even better than rice. I've never seen the appeal of rice, too bland.

That's the best part about it. Rice will take on any flavor you give it. Great meal Tommy. Looks super yummy.
