Title: Dee's Brunswick Stew

Thanks for all the comments about my Brunswick Stew.  There are many ways to make it.  My Daddy made the best I ever ate.  I helped him make hundreds and hundreds  of gallons of it in our big ol' cast iron wash pots.  Like many younguns I didn't pay a whole lot of attention because I thought he would be around for ever. I have a list of his ingredients and I use them and make a few changes. I now use the following for my basic recipe and vary it very little.  I recommend trying it as listed and then make adjustments as you see fit.  It's good right after it's made but is better the next day.

1 whole chicken, 3 medium onions roughly chopped.
Season chicken with salt and pepper. Place chicken and onions in large pot and cover with water.  Cook until meat falls from the bones. Remove from heat and let cool. Shred meat and return to pot with the stock in it.
Add:
A couple of pounds or so of pulled pork
4 (16oz) cans diced tomatoes
5 T Worcestershire sauce
1&1/2 (14oz) bottles catsup
2 T Tobasco
2 bay leaves
1/2 (12oz) bottle chili sauce,
1/2 tsp dry mustard
1/2 stick butter
Cook 1 hour stirring occasionally to prevent sticking

Add:
3T vinegar
2 (16oz) cans lima or butter beans
2 (16 oz) cans cream corn
1 (15oz) can english peas
3 small diced potatoes
box of slice okra (optional)
Cook slowly until thick.  Stirring to prevent sticking.

Well, that's pretty much it. You may find you want to add more hot sauce and salt at the table. This makes a couple of gallons or so and freezes well.  I don't have any pictures but there are some over on SOTG under "Fall Gathering 2012".  Brunswick stew is really great and you can mess with the recipe alot but the above is the best I can find right now.  If I found a better one, I'd be using it.  This takes awhile to cook so don't rush it.  After you add the chicken back in just keep a good simmer going.  Let me know how it comes out for y'all.

b stew in most excellent, Donna makes it a lot, and so easy to do, last time I had it, it was like mush, yuck, you will not regret trying it...promise.  Pam

Gosh - The Smoke sounds more like Dee everyday...  ??? ??? ???

Thank you for re-posting this - this is the perfect time of year to cook up a batch... I might need to get a bigger pot...

I wonder if this would this work in a slow cooker?   The chicken is already cooked/diced up.  I'll make the stock ahead of time with some leftover chicken halves..
