Something else we've done with some success is bake potato fries on convection bake at 300* for about 10 minutes, the window will steam up from the moisture in them.  Then we take them out and spray a little oil on them and put them back in on air fry until done.

My wife made these awesome steak fries tonight along with a "philly" leftover-brisket sammich. The fries were the star of this plate! She air-fried them at 400 degrees for about 15 minutes with no oil. They were crispy on the outside and fluffy inside.
