Happy New Year!
did some teriyaki baby backs to start the year right. I used a very basic rub because we wanted to really taste the flavor or the pork with the teriyaki bbq sauce.
Dry Rub:
- Sea Salt
- Fresh Cracked Szechuan peppercorns
- Onion powder
- Garlic powder
- Ginger
- Cinnamon
In The PBC:
- 1hr in, PBC temp 255 deg.
- 2hr 30 min PBC temp 249 deg.
- 1st Sauced at 3 hrs 20mins
- 2nd sauce at 3 hrs 50 mins
- PBC temp @ 4 hrs, 274 deg.
- Took racks out @ 4hr 15min
