I'm gonna make au jus sammies . I'll update pics when done . I trimmed silver skin , tied , and roasted. Hopefully a nice rare. However I'm gonna cook it in au jus tonight to bring to a medium rare. I made horse radish sauce and a rub for roast beef from amazing ribs sight. I'll include pics of meter app as well. Sorry this is dragged out. I carved it. And taste tested it. It was tender !!! Dinner is still tonight and I'll finish this thread up

Sorry my bbq friends. I forgot to take pics of sandwiches. I used Hawaiian sweet buns and piled high with meat, horseradish , and some Swiss cheese. They were really good. My wife loves the French dip I took the pic with earlier. With so much leftover we're thinking hot open roast beef with gravy and mashed potatoes for tomorrow's dinner. I won't forget the pics !
