Title: PBC Cornish Game Hens and Corn

Got a couple Cornish Game Hens...

And 5 ears of so-so corn. Our California corn sucks but they were 5 for $1 so at least there is that...

Big Poppa's desert gold seasoning and smoked sugar...

And some unsalted butter...

I shucked the corn and lobbed the ends off. Then coated with the unsalted butter, desert gold, and smoked sugar. Then tightly wrapped in foil...

Repeated 4 more times ;)

Meanwhile the birds were given a couple hours to air dry in the fridge...

They were then brushed with unsalted butter and seasoned with Tim's super secret M-3 seasoning...

Then back in the fridge for another hour.

Now I got the PBC fired up. In goes the corn and the birds. I am figuring 1 hour should do...

Dumb question, is sweet corn seasonal in CA? In Minnesota we have about a 2 month window or so.

They were good. Nice and moist. The corn wasn't bad either ;)

Another good looking cook Mike.  If you have to go into San Fernando Valley, there is a Farmers Market in front of Holy Cross Hosp. on Rinaldi.  They have great corn and probably early fresh tomatoes now, lots of good veg's.

Nice Job Michael, I have had three Cornish game hens in my lifetime :) The corn and walla walla onions are great this year.
