Round roast w/ meater on pbc

I'm gonna make au jus sammies . I'll update pics when done . I trimmed silver skin , tied , and roasted. Hopefully a nice rare. However I'm gonna cook it in au jus tonight to bring to a medium rare. I made horse radish sauce and a rub for roast beef from amazing ribs sight. I'll include pics of meter app as well. Finished product pics tonight

Resting just to note the pbc temp topped out at 299 . It steadily climbed to that temp during the cook. It started at 240

Sorry my bbq friends. I forgot to take pics of sandwiches. I used Hawaiian sweet buns and piled high with meat, horseradish , and some Swiss cheese. They were really good. My wife loves the French dip I took the pic with earlier. With so much leftover we're thinking hot open roast beef with gravy and mashed potatoes for tomorrow's dinner. I won't forget the pics !
