Filets and Artichokes on the PBC!
« Reply #-1 on: July 07, 2013, 07:21:47 PM »
Hope everyone had a great Holiday and long weekend :) We cooked many things over the last few days but my favorite was the pork ribs, filets and grilled artichokes on the 4th of July. We had a tenderloin laying around that we needed to cook so we decided to carve it up into filets, bacon wrapped filets :) We usually grill the artichoke hearts on a cedar plank but this time decided to cook the entire artichoke, they were delicious! Cut the artichokes in half and soak in lemon water for about 10 minutes then boil them for 15 minutes to soften. Remove and pat dry, in a bowl mix, garlic, lemon, olive oil and salt, coat the artichokes with this mixture and place on the PBC, flipping them every 5 minutes, and coating them every 5 minutes until they are charred on the ends :) Here's a pic, Enjoy!

Very nice looking cook. I haven't used my grate much other than pizza or finishing a butt - will have to try some more items. Thanks for the inspiration!

I've done ribs, whole chicken on a beer can holder, wings, poke chops, sausage , pretty much everything h on the grill grate. I do use the hooks too.

The average temp in the PBC is around 300F according to my measurements. No water pan is used in the PBC.
