so that means I'm working from home tomorrow.
And that means I'll be trying my first brisket flat on the PBC!
I think Dee is going to stop by and take some photos for me. ;-)

Nice way to spend the day. Only Dee gets a pass on pics though ;D

Good luck.

Careful! Dee is very professional with his camera. His pictures turn out so good he never shares them ???

During the cook.
Its now wrapped in foil resting comfortably. Coals are still looking good, so I'm throwing on some garlic bread.

looking forward to seeing the finish cook. love brisket

First of all, I've got to say a 3.5 hour brisket is most impressive. Smoke ring and all. Moisture was pretty good, but I need to work on the flavor profile a bit. Tasted a bit like roast beef in places.

Nice looking flat.

That brisket looks awesome!

Sampled the brisket and compelled to report it was mighty good. Not too much smoke penetration, tender with good flavor. Nice work Grossie

3.5 hours is awesome. So much for setting the alarm clock and freezing your arse off at night. That is a good looking brisket :)
-
That looks really good, When I saw your first post yesterday I went out and bought a brisket for the weekend!
-
Upon further review, the flavor needs a little work, but it was better than I originally thought. I brought a little bit into work and it seemed to go over well.

Grossie- Looks great! I would recommend the beef and game pit rub on that :) Happy Holidays!! PBC Co. - Amber
