The weather is a little bit nicer today, and I'm working from home again...so, it's time to do some cooking. One of the great things about the PBC is that there is so little work to be done while it is cooking, that I don't feel guilty about cooking while I'm working.
I'm following the video again for cooking a chicken. And it's about time to order some more general purpose rub.
I'm going to try something a little different with the ribs. I'm cooking a fairly large rack of baby backs, but I'm going to pull them a little early (after saucing), add some squeeze margarine and honey to them, wrap them and finish on the grate. I'm using a local rub with a touch of Habenero Death Dust for some heat.

I'm a little worried about the ribs. They cooked faster than I expected.

Ribs sure look a nice color and nice finish!!! Love chicken done with charcoal but I get lazy and do them on my pellet smoker. If I was younger I would have a PBC! Don
