Title: Hot PBC Butt on a chilly day

Just a quick thread for something to look at. Put a butt in the PBC today. Injected with apple cider, soy and Zack's. Rubbed with EVOO and Zack's. Left in the fridge overnight wrapped tightly with some Clear wrap. Took 7 hours total.
It was 50F all day. I used 3 hooks and put the grill grate in just in case. The grate wasn't needed.

That's what I'm planning on the butt cooking Tuesday, pulled, and then warmed up for a church dinner Wednesday night!   IF it comes out close to that, I'll be a happy camper!

Looks great - plan on trying one later this week.  Have you tried it with foil?  Any major difference or issues?

This one was 5 hours naked and 2 in foil. The bark is not, how can I describe, as crusty as an all the way naked butt because it as you know, it steams in the foil. It was a bit more moist than the one I made 2 weeks ago.
I foiled because I didn't know if I was going to be able to get to 195F before I ran out of heat. It was cold for here that day and windy.

Well, since this will be my first PBC butt (already injected with Carolina Treet, covered with rub, and resting in the fridge) I guess I better go with Noah's instructions (at least initially) and foil at about 160o. I can experiment after that. Thinking about opening the foil at about 180-185o to see if it will "recrisp" the bark. Any thoughts or suggestions?

I think that would work. Getting it thru the stall, then taking the foil. I was thinking about doing that myself but I don't think I would of had enough heat to finish it off.
I have done that in my Traeger before with good bark results.

Finish in your oven at 450F to crisp it back up Turtle.
