Title: 15 Traeger chicken legs

Well normally I use my TBE to do the chicken legs on the leg racks but decided to give the pellet pooper a go. The legs were seasoned with Costco's Sweet Mesquite seasoning. Then onto the frogmats in the Traeger for an hour at smoke using Washington Applewood Pellets. After an hour of smoke I turned the thermostat up to 375F for 30 minutes until the largest leg was at 180F IT. They were excellent! Moist and juicy. Great smoke flavor too! But the skin was a tad rubbery...not bad but just a tad rubbery. I am so spoiled with the perfect crispy skin from my TBE that I am very critical about the skin. So I think that maybe 30 minutes on smoke would have been better instead of doing an hour. Those lower temps will cause the rubbery skin. The legs were very moist and tender just like with TBE though. The plate was served with store bought cole slaw and Texas toast ;D
