Title: Smoked Tri-Tip Sandwich

Who says you can't take it with you?  A simple Tri-Tip Sandwich on the road using my GMG Davy Crockett  8)

Rubbed Tri-Tips with EVOO and Smoker Pete Seasoning.  Wrapped in plastic & fridged overnight.  Smoked at 190ºF for an hour using Hickory then bumped to 350ºF until IT reached 145ºF.

SWMBO suggested I use a frying pan to rest the roasts for 20 minutes under a foil tent.  Worked out great!  Some people pull it sooner but 145ºF works for us.  Gots me lots leftover for more sammies!!  :D  ;)

We ate all that dungeness crab!  :D  ... going crabbing again tomorrow - wish me luck  :)

I've never dry aged anything Rick but I think muebe has.  I would think that dry aging would turn out OK.  Give it a shot if you can find a Tri-Tip in Georgia  8)
