Title: Pork loin experiment

I decided to finally set up My Big Joe's divide and conqueror system and see how it shakes out.

After getting to about 400 degrees on dome thermometer I put a pork loin on the bottom grate to sear

After the sear was complete, I moved it to the top grate and shut down the vents to slow the cooking process for a little more tender loin.

They pork was excellent and I got to get out my new infrared thermometer and play.  As you can see, just by putting in a heat deflector and raising a rack you can have a dual zone cooker with the Kamado Joe.
