Title: Tip for setting up a Weber charcoal grill for indirect low and slow

First, I want to make sure that I stress that everything I am posting on this tips and tricks I learned from other great members here on LTBBQ

This is the indirect low and slow setup I use for making ribs/butts/etc… on my weber silver. This setup will burn for about two-three hours so you will need to add some heat along the way. But you know about that.

QUESTION, NOT DUMB: how often do you have to add coals and how many at a time..new to my Weber too. I have the firebricks already..learned about them from Old Dave. Bookmarked.  Pam    .☆´¯`•.¸¸. ི♥ྀ.

If using the charcoal baskets, start off with 25 briqs in each basket and then add 8 briqs as needed.  I basket with your bottom vent 1/4 open should have you run around 250 and both baskets with 25 in each should have you around 350-400.

I got these directions from some of the guys over at the Weber forum and they are pretty spot on.....

Do you think using one of those would work instead of lighting a small handful if briquets in the chimney?

Dumb question, do you put the cube inside the starter or underneath it?

I set the cube on the charcoal grill in the kettle. Light it up and set the chimney starter over it. Very easy to dump the coals when ready because the starter is right inside the grill. Best way to go, especially if it is breezy.

RAD, I quit using my Weber charcoal baskets in the OldSmokey
I just use my foil pans to separate the coals for my indirect cooks

for single-sided indirect I've got one of those big oval turkey foil pans. and on the side against the wall I bent the pan to fit the side of the OS to keep any drips in the pan

and for doing two-sided indirect I use a big 12"x 17" foil pan as the separator/drip pan

What I was thinking about was putting all the briquets/wood chunks in the side basket, then putting the cube at one end and lighting it.  I assume that would work the same as lighting a half dozen briquets in the chimney and then putting the lit coals at one end of the basket.

I hope it would the same in the WSM.  (Instead of using a soup can to hold open a space in the middle of the bed of coals - Sparky showed me this - to dump the hot coals into.)

Like you guys, I'm getting tired of all of the ash left over from the newspapers and the cubes are not that expensive.

This is the method I use with the cubes also.  And when I have been out of cubes I set the chimney full of coals on top my Camp Chef burner and light it, the burner will light the coals just fine.

it's one of those stainless chainmaille mop brushes
you drizzle the mop liquid over the cook
the handle was too long so I hacked it off ;)

It is made specifically for the Weber Kettle.
Deb gave me one for Christmas last year and I really enjoy using it...takes a lot of the guess work out of it and once it's dialed in, you just add bring every hour.

I have never used a charcoal setup on my Weber for low and slow cooking.  I usually start my charcoal in a chimney, and notice dark smoke until the coals get fully lit.  That made me wonder what happens with a low and slow setup, with unburned charcoal slowly getting lit by the hot coals.  Does this create a smoke condition that effects the taste in the food?  It must not, or everyone would not be using that method?

I haven't had a problem, Cookie.  In fact, whenever I'm going low & slow, I'm adding wood chucks to get smoke.

I can say that, as the cook progresses, the smoke reduces, unless I add more wood chunks, even if I add more briquets.

Very  nice post Rad. I have been pondering at the Weber grills lately.... Can't afford that fancy setup that self lights with the cart and all but want the newer stand alone copper colored one for $149.
