I haven't smoked anything in a while, and having to entertain all Thanksgiving week/weekend (hope everyone has a good one) I wanted to unwind with some ribs. My Steelers (ugh) were on TV in Philly so it was prefect for me. Pretty much held at 232 for the first 90 minutes, then I added coals and some more apple wood. Next 2 hours it rose to 241, the next hour it slowly dropped back to 230. I wrapped (butter and honey) for the last 45 minutes as the temp continued to drop 220. I didn't want to add anymore coals because they were pretty much done.
Overall I am getting better, they were a little tough, but came clean off the bone with basically no effort effort. Rub was the best one I've made so far but still needs a little tweaking here and there.

Been rootin for the Steelers since watching them beat the Bills (with OJ) in the 1972 divisional playoffs.
It has been tough lately but we got -6- rings so I cant complain too much.
