Title: Smoked Prime Rib Christmas Dinner

This was my first try at a smoked prime rib.  A special thank you to my family and friends who got to be the test subjects :D :D :D


This was a 9.5 pound off the bone PR.

I rubbed the PR on Christmas eve with Montreal Steak Seasoning and wrapped in plastic and put in fridge to rest overnight.

Onto the smoker at 275 degrees with Hickory pellets (honestly I would have smoked it for the first 90 mins at 160 degrees but the Bride did not want her Christmas Prime Rib to be 'too smokey'  :o)

Cooked to an IT of 138 degrees, removed from the smoker and tented loosley in foil to rest for 40 minutes.  The IT rose to 145 degrees final temp.

It turned out as I had hoped for doneness and cooked really even without the rack of bones.  Everyone was "happy to be a test subject"  ;) ;)

The end pieces were more done for those who don't like medium rare (shocking I know)
