Title: USDA Prime Rib Roast

Did this beauty in the Traeger, no need for sous vide since it was a USDA Prime cut.  Set the Traeger at 225F and let it ride for ~3 hours.  Once IT hit 120F, pulled it, foiled it, let it set for 20 minutes before carving.

I still got about 1/2 of it put away, sliced it into 3/4 inch slices, vacuumed sealed them, and will reheat them sous vide at 120F, they stay rare that way.

OOOOH nicely done!!   Sous vide must be amazing for reaheating without overcooking!  That roast is just divine!

Just staring at your picture of that beautiful thing should be enough to cure a vegetarian on the spot.  Its good that I wasn't present for the unveiling because I'd probably have grabbed it, run off to a quiet corner and started gobbling -- very rude behavior.  The older I get the harder it is to overstimulate me, but that roast is one fantastic exception  ;D

Michelangelo had his Sistine Chapel & Da Vinci had his Mona Lisa.......Well you now have this roast......one of the greats of all time......but the others did not eat their work of art they left it for all of us to enjoy :D

That is as perfect as can be with the color extending from every edge - no "gray." Nice, no, excellent job! The rest of the plate looks great too!
