Title: Pork Steaks

These are all the rage on the Bullet forum.
Pork steaks are a Pork Butt sliced into 1 inch thick slices.
Seasoned them with Penzeys BBQ3000 and onto the Smokey Mountain at 250 with Hickory and Black Cherry for smoke

After 2.5 hours they are ready for the grill. Internal was about 160

Plated with some zucchini from the Victory garden. Had a crispy bark and moist and tender in the middle...these are a keeper!!

Looks great!  I tried pork steak for the first time a few months back and really like them.

These make me want to cook some this week

With the price of beef going up pork steaks may be the only steak I have this fall :(

That is something I have not done with pork Mike! How long do you like to brine these?

I might "soak" em next time for probably -4- hours. I wouldn't do it to get moisture, but for flavor.......

Basic brine? - or what do you like Smoke?  I just saw an ad for pork steaks here for $1.69 lb. headed for the store today!

Yup a basic brine of salt brown sugar some of the rub you are using. What I really like is Kosmos Q pork soak!!

The butcher sliced em with his ban saw about 1" thick.

Pork steaks (from pork chuck) are really popular here in Germany. But here they're cooked in general on medium to high heat, after being marinated with paprika, mustard, salt, pepper and lots of sliced onions for 2 days.

I like your version and I'm gonna try it low & slow next time! Thanks for inspiring me!
