Title: World's Easiest Meatloaf

This could also be called "Meat Lover's Meatloaf" because that's almost all that's in it!

Posted under "pork" but it also has beef in it.

Background:  I developed this recipe because I didn't have all the "traditional" stuff on hand to do a meatloaf one night several years ago.  It came out better than any I'd ever made and was a whole lot easier.

Warning:  If you have to have lots of different things (bread crumbs, chopped veggies, eggs, canned soup, sauces, etc.) in your meatloaf then this isn't for you.  This is a very easy, carnivore's meatloaf and makes a tight, savory loaf that will be medium-moist, not squishy.  It will taste like MEAT  ::)

INGREDIENTS (You only need three -- yep, just this and nothing more)

1 lb. 90/10 Ground Sirloin
1 lb. Hot Sausage (I use Neese's, a regional brand).  DO NOT use mild sausage.  The heat disappears.   
1 1oz pkg. Lipton Onion Soup Mix.

Mix the above in a medium bowl using your hands to thoroughly combine.  Form into a loaf about 3" high.  Place in baking dish or on a Frogmat depending on your cooking approach.  Pellet cookers do this one superbly  ;D  but it works in the oven, too.

Cook at 375 for approximately one hour or until IT is around 155 to 160

That's it.  Too easy  ???  Comes out to about 60 calories per precooked ounce if you're watching your diet.  Guess I could have called it "Diet Meatloaf", too.

Options and Comments:

1.  Add a very light coat of Ketchup or Tomato Soup (condensed) during the last ten minutes if you want to glaze it.  This does more for the looks than the taste, in my opinion.

2.  Because of the low fat meats, it won't yield enough grease to make much gravy.  You can make some dynamite fake gravy out of a can of condensed mushroom soup, two beef stock cubes and about a half cup of water, though.  Dissolve the cubes in the water (heated) first, then stir in the soup.  Don't knock it until you've tried it.

3.  Resist the urge to add more spices, sauces or superfluous BS.  Sometimes less is more and this is one of those times.

I knew you had an answer for the "gravy".  I love meatloaf with gravy, except when I am making sandwiches out of the leftovers.

Never been a fan of this tactic.  If, for some strange reason, I want ketchup on my meatloaf, I'll put it on there myself, if you please ! !
