Woke up kinda late to do a briskie so I fired up the kettle for smoking!!
Wet aged a briskie for -3- weeks. Cut most of the fat off. Injected with Kosmo's Grand Reserve Brisket Injection for that deep down beefy flavor!!
Used a spicy sweet garlic rub from Montana Cattle Company.

Onto the kettle with some California red oak for smoke......

-7- hours in the kettle and a two hour hold I got this...(who says you need a 400 lb offset to do good briskie?? (http://i1213.photobucket.com/albums/cc469/s1cott11/icon_biggrin.gif)

Sliced like warm butter...keeping the fat on is not crucial in having a moist tender briskie...I must have trimmed off 4 lbs!!

Looks delicious!

Nice job, but (ahem!) a key member of your smoking team seems to be missing. I'm hoping he's on vacation rather than sick or hungover.

You are right Turtle. I always get a visit from Sagebrush Smoochy when I do a brisket!!! Must've forgot him in the truck!! I will let him do a cook next weekend!!
Hey Sparky, I had a aluminum pan under the briskie and I put a little HD foil to catch the overflow of drippins for hopefully an easy clean up today after work!!
-
Killer brisket! Hard to beat a Weber kettle.

I hear with, "who needs a 400lbs pit", shoot just might get rid of mine as well. I got a kettle which I've been using more anyways. Excellent briskie Smoke... pow pow

Yeah boy! I have done more than a few briskets on my old kettle. I still think, hands down, they are one of the most versatile grills ever made.
Smoke, that briskey is lookin' guuu-uuuud!

My best briskets have come off a plain old 22.5 Kettle...go figure...........
