Title: 4 lb. Grilled, Stuffed, Boneless Pork Loin Experiment

A contractor that worked on our house most of last Fall brought a variation of this to my attention. Now something that we all need to know, is that he is a class A practical joker! So we will see if this is practical, or if it's a joke!  :-\
First up, I had to roll-cut the loin so it laid flat. Next pic is the players, Krema peanut butter, home canned peaches, (from aforementioned contractor) plenty of thyme, and S&P.
OK, slathered on the peanut butter,  next placed about half a qt. of the peaches on, and then a liberal dusting of dried thyme. Everything got rolled up and tied with butcher's twine, then a spritzing of EVOO, and a nice coating of Fine Swine & Bovine. Our plans changed for this evening so I vac sealed the loin and refrigerated until tomorrow's cook on the PK Grill. To be continued........check back! I'm dying to taste the outcome!

Lol SB you have a strong point there! I'm not going to say here what they look like to me in the thumbprints, lol!

Obviously...pork is a gentile meat....tho if you keep it in the fridge for 8 days, then trim one end...... ??? ::) 8)

Hey we're cookin'!  Set the PK Grill up for indirect cooking and running a steady 250-255F. I'll post more pics as things progress.  8)

Okie dokie! All done with the experiment. It was cooked at a steady 250-255F  until IT of 135F.  It came out perfect, it was as tender as sous vide but sure smelled better on the grill than in the hot tub! The flavor was very good, everything seemed to mesh, and I will do this again. But next time I will use a thicker peanut butter and whisk into the butter some soy sauce and a bit of heat, maybe cayenne and a touch of honey. All in all a successful experiment,  but by no means perfection! It was plated with a basil, tomato, brown rice pilaf and cole slaw with a simple dressing of fresh lime juice and EVOO. Time for an after dinner cocktail!  Cheers!  8)

Peaches and BBQ go hand in hand. Gonna have to think about the PB.....sure glad this experiment worked out...looks real good. The PK is one heck of a indirect cooker....  8)

It does look good... but....  ::) ::) ::) ;D Oh heck might have to try it...

As best as I can figure it was supposed to have an Asian lean to it. Mrs Hikerman really liked it and she can be critical at times! Did I say that? ::)  I will try this again but I think it needs sweet heat for a fuller flavor.

I like peanut sauce or peanuts on Thai food - but, yeah, I think the heat would probably be a good idea. Definitely a jumping off point.
