Thanks Old Dave for the great idea with the pork burnt ends. I've tried them on friday and here's the result (seasoned with Simply Marvelous Sweet Seduction, BBQ sauce was Stubb's Honey Pecan, smoked with aplle wood).

After a bit more than an hour:

After 2,5 hours I liked the color of the bark, sprinkled them with more rub, honey, packed brown sugar and soaked them in BBQ sauce to put 'em back on the ceramic cooker.

45 minutes later I tossed some of the burnt ends on a toasted ciabatta and added some lengthwise slided shalots and pickles:

Great looking cook, WC. I can't believe I haven't cooked something like this before. It is so simple, and really tasty. I can see a lot of pork burnt ends in my future, with and without chocolate.
