They call it "Swineapple" - a hollowed-out pineapple stuffed with country ribs and wrapped in bacon before smoking. No, I probably won't try it but it opens up a whole new landscape of faux-Hawaiian entree ideas for Doc Holly.

OK REALLY, REALLY dumb question, were the ribs cooked first or cooked in the pineapple ?

Here's the recipe I saw:
Hollow out pineapple.
Trim bark off pineapple.
Shove meat in the hole.
Wrap in bacon.
Smother it in spices.
Smoke at 240 for 5 hours.

Doesn't it have need Canadian Bacon to be Hawaiian - ::) ::) ??? 8)

Don't laugh, but I have taken a block of Spam, rubbed it in mustard and a healthy dose of rub and put it on the smoker when doing ribs. Cook it till it has some bark. It is pretty good.

Not laughing, TP - delicious! Just give it some cuts so it "blooms" like an onion. I live in the state that invented and makes Spam - love it. My wife hates it, but it still makes my breakfast plate from time to time.
