I like where this is headed. If you are looking for crispy skin, you may need more than 275. Probably 350 to 375.

Decided to have the temp at 350-375. Now saucing it up

Yea wasn't thinking at the time (tipsy) but turned it up and just pulled it off. And now letting it rest for 30 min.

Couple things I like to do.
I use the beer can 3/4 full.
I like to heat the beer in a sauce pan with spices then put back into the can. This way the beer is already hot. The steaming effect can take place right away.
Air dry the chicken overnight in the fridge with the skin salted so it ends up more crispy
And use higher temps so the beer is able to steam the interior of the chicken.

Muebe also only uses organically grown domestic light beer or Zima.
