After seeing Smoker Junky’s rib cook (http://www.letstalkbbq.com/index.php?topic=14127.0) the other night where he used huckleberry rub I ordered some from here (https://www.spokanespice.com/itemdetail.php?id=1454&secid=90).
This is an 8 pound pork butt that I picked up this morning. I trimmed off most of the fat cap, leaving about ¼ inch)
hit the butt with some CYM and then the rub.

Put into the Grid Iron, using Cookin Pellets hickory, with an initial temp of 160. After about 2 hours I kicked up
the temperature to 215. When the butt hit 155 I double wrapped it in foil with some Mango nectar and a little
more of the huckleberry rub. I kicked up the Grid Iron to 250 to finish the butt. I pulled it at 203 and let it rest
for about 2 hours.

Once it was wrapped I added a pan of Bush baked beans. Bacon was seasoned with Super Pig.

Plated with the beans and corn on the cob that I had foiled and threw on the grill for the last 2 hours.

The rub has a definite unique flavor of sweet, spicy and fruity. The next butt I do I am going to inject the butt
with some of the rub. I do believe this rub will go good on chicken which we will definitely be trying.

I think it looks great. I got some of that rub also. I did a rack of ribs with their coffee n cocoa rub. It was good.

Mike, that rub sounds like it would taste really good. I know the pulled pork sure looks incredible.
