Y'all, I want to tell ya again how happy I am with the results I'm getting on the Pecos offset. Since reading Aaron Franklin's book - the chapter on smoke and fire - I have been able to manage smoke and fire with complete confidence.
Today, I smoked a couple of racks of spare ribs. I let 'em go at close to 275* - don't wince - for about 3 hours, spritzing with water along the way to keep 'em moist. When I was going to pull and foil, I thought, "dang, these look good already." so I left 'em like they were for almost another hour. At this point I brought the heat down to about 225* or so by not adding so much wood.
I kept checkin' 'em with the old "bend test" and when they did the "bend" they got to come off. I let 'em rest for a long time while I cooked some wings on the smoker.

While I like foiled ribs, they are a pain to wrap and seal. I much prefer the texture of "big boy ribs"! Spritzing or mopping is imperative tho! In fact ribs are on the menu today! 8)

The same smoker...in fact, that's why I bought that smoker - it is A F certified.
I know there is a new member here who is asking about a smoker. IMO this is a good smoker for $400.00. It is probably a solid "beginner" smoker that won't get you all frustrated IF you understand the A F way to manage fire and smoke.
His book is titled "Franklin Barbecue: A Meat-Smoking Manifesto". It is very helpful for the beginner and intermediate smoker and very interesting for anyone who likes to cook outdoors. Available on Amazon for about $17 bucks.
