I watched the chicken video. Not comfortable with put it in for two hours and walk away. Would really like a probe.

It is a little unsettling not to use thermos to monitor temps and time, but that is what this smoker was designed for. To do the work so we can kick back. It is popping up in comps..imagine while teams are up all night managing temps PBC teams are snoozing away!! You wouldn't even have to start your PBC until 4 hours and 20 minutes before turn in!!  ::) ;D
