Title: Cold (War) Smoked Cheese

Fired up the AMZN pellet smokers (one in the nose cone, and one in the firebox), and got busy smoking a bit of cheese in Blue October.   ;D

Pepper Jack, Colby Jack, Medium Cheddar and a small hunk of Gouda.

No fire going, so the 'reverse flow' draft needed a little help.

We'll give them 3 hours of that and see if they've picked up some color.   It's supposed to touch 80* today and then storm like the dickens.   I'll have it back in 'dry dock' by then.

So whats the story behind this New smoker Pat, Did you get it used and refurbish it or did you have it built? All the Tanks that size at work in the boiler rooms are covered mostly in asbestos but we are knocking down a few schools soon so I'm hoping to find a nice Tank to play with, and a double tub stainless steel sink with work table .

Hal bought it up in Iowa from a welder.   He's looking into competing and such, so this was the prototype.  He's building the 'real deal' for himself.

It's 1/2 of a 1000 gallon propane tank, mounted on an agricultural trailer of sorts.   I think it was an old fertilizer spreader from the layout of the 5000 pound (!) axle and the long tongue.    It's a drop pin hitch.  Old school.

Last time I moved something like that, I was in a tractor, and 'it' was full of corn.

After about 2.5 hours.  The AMZNPS tube is still puffing away.

Close enough.  I pull the cheese to cool down for a bit in the freezer, while I wrestle the beast into the garage.

The softer cheeses took the most color.   I've got them vacuum sealed now, and will hide for about 6 weeks before opening.

You should put some radioactive stickers on the package when you seal them ;)

blue october is a cold cheese smoker.  right on.  i love it.   :D  my wife came over to see it and said don't get any ideas.  but dear, squirt got a big @ss smoker.  i want one.  plz........ :'(

I'm trying to figure out how many pounds of pistachios I could fit in it...    ;D

My wife is looking forward to November 1st, when we more this to it's new Dry Dock.
