Let's open another page in RG's greatest hits shall we? This time we're going to talk about Moinks. For the 2 of you that don't know what a moink is, it's a beef meatball (MOO) wrapped in bacon (OINK). I decided to place this in the smoker section versus grill as I smoke these with apple wood for 3 hours or so. Time for them to render the bacon down. I then glaze them with my homemade bbq sauce. These get eaten almost as quick as they hit the plate. My guests can't get enough of them.
Basically I take ground chuck that I grind from a chuck roast and add a little brisket fat. I take 3 pounds of ground chuck, add 2 eggs, bread crumbs (I add until it reaches the consistency I like, start with 1/2 cup), garlic powder, onion powder, salt and pepper. I portion them into somewhere between and golf ball and ping pong ball size and wrap with a half piece of bacon. I then dust on all sides with a coffee rub. Lately I just use Weber's version : Weber's Coffee Rub (http://www.samsclub.com/sams/coffee-rub-12-5-oz/prod16300367.ip)
I smoke them on one of the Kegs with a diffuser (BGE plate setter) at somewhere around 300°. Peach wood or apple. In the home stretch I glaze with my sauce to let it set and get all thick and gooey. These little suckers are wonderful!

I like that idea! So many ways to "Moink", I guess yours was a "Choink" lol. What is this other site you speak of?

it was the Charbroil site. Where a lot of members here met. They shut it down a fees years back that's how this great site came to be. They missed a great opportunity by closing that site but Tee seen a great chance to start a site and it's a home run

Well I'll be! I never knew. That cracks me up actually. I like them, really I do, but I am not so sure they need their own day but who am I to decide? :P

I actually Googled it earlier, lol. Like I said, if it's declared Moink day then so be it! A Moink in every pot I say!!!

You can make them Pap...they are not Kosher - so you will not burst into flames...... ;D

First time I ever heard of that term.... I think I will have to try this myself in the future..... Got to love anything wrapped in bacon! They look great!
