Title: Crispy Honey Siracha Wings on the BGE

Mrs Scally hates wings with chewy skin. Found a cool solution to that on the web. Sounds weird but after this cook I'm sold.
Start with 2 tbs is baking powder.. Not baking soda, 1 tbs of salt, 1 tsp of fresh ground pepper and 1 tsp of smoked paprika

Mix well and coat wings

Fired up the BGE

Some hickory chunks to add

On at 225 to smoke for 30 mins then bumped up to 400 for another 40 mins to cook and crisp up
All done .. And yes they are as crispy as fried wings.

Made wing sauce.. Equal parts honey, Siracha sauce with a splash of rice vinegar and peanut oil. Simmered to reduce just a bit

Tossed the wings in the sauce, topped with some sesame seeds and served with carrots, celery and blue cheese dressing

Try these wings.. The sweet from the honey and bite from the Siracha is perfect.

They look awesome!

And what perfect timing too.  I just saw this recipe from Chef John from Food Wishes.com earlier this week and the baking powder really intrigued me as well as the flavor. I've been wanting to try them ever since.

Now you really have me wanting to try them!

The recipe sounds like a good one, and from the pics it LOOKS like a good one.

I saw the same video. It does work. I believe one of the ingredients in baking powder is baking soda. Also corn starch is part of it too.

Oh man those look awesome!   I'll have to try the baking powder trick-- I'm all for crispy crispy!

I agree with  baking powder.
When I roast fowl of any kind I brine one day, rinse, paper towel dry and sprinkle a mixture of fine ground sea salt and baking powder on the bird to hang dry for another day in the the fridge another day.

I tried your recipe for the wings and the sauce.  I didn't take any pictures because I had several guys working in my flower beds prepping them for mulch in the next day or so.  I was in and out of the kitchen, and I was hungry.

The wings were great.  My wife loved them (without the sauce, however).  There was still too much "bite" in the background of the sauce  for her.  I loved it and will do the wings and sauce again.

So good Mrs Scally requested them while we watched the Toronto Raptors start the series against Cleveland.. We don't get much of a chance to cheer for playoff sports up here..
