Made some Baby backs on the MES 30 yesterday and the wife said they were the best I ever made. Covered them in Fine Swine and Bovine then smoked for two hours with alder chips at 225 F. then cooked another hour with no smoke. Pulled and foiled, butter and Superpig was added to the top of the ribs in the foil. Cooked another 1hour and 15 minutes at 225 F. Removed from foil and cooked another 20 minutes to get a glaze. Also had some fresh beets and greens from the neighbors garden. That white thing in the picture below is a reflection of my sock, took me forever to figure that out as it looks like Ice with a barcode on it :)

I don't like the camera on my phone for food pics which all these were taken with. I am going to start using my other camera.

I missed that part and will fix in original post. It was about 1 hour 15 minutes in foil at 225 F. They were fall off the bone with just a bit still sticking to the bone.
