Title: Zaycon Loin Back Ribs

I picked up a case of loin back ribs from Zaycon foods yesterday. Yes, all the racks are this large and they come with the
membrane removed.  I thawed one rack and this morning I dry brined it with kosher salt.  About an hour before I was ready
to smoke them I seasoned them with Meat Church BBQ’s new rub The Gospel.  This is a low sodium and tasty rub.

I am using the Grid Iron today with Lumberjack Pecan pellets.  I started the ribs at 180 for the first 1.5 hours then kicked the
temperature up to 230.

Here they are getting ready to be wrapped with some honey, brown sugar and no salt butter.  I love the color that the rub
gives the ribs.

A couple of things that is noteworthy.  The Zaycon ribs are a real deal. I purchased a case of the St Louis style ribs a few months
back and they were just as good. Both were extremely large and very meaty. I also bought and shared a case of their chicken breasts.
I have no idea where they found chickens that were that big.  Just some monstrous type breasts. The Meat Church BBQ Holy Ghost rub
is fantastic on ribs. I tried some on some chicken the other and they were good but I think pork is where it will shine the most.

I check Zaycon's web site and see one is in Pooler (where it is cooler lol).  Do you know of others in the area.

Anyway based on your recommendation I am going to check Zaycon out.

Yep, but you can go in with someone else and split with them when you get the product. That is what I did with the chicken breasts. Not going to happen with the ribs, tho.  8) ;)

Because I am so excited I am sure I miss this but how many racks of Baby Backs in a case?

12 to a case, 36 pounds total. I probably would have paid a little less at the commissary but I seriously doubt that they are of this quality. When we get together I will bring you a rack.

They should be making a comeback soon. Zaycon rotates throughout the year.

I have been impressed with most of my Zaycon purchases. As HOS said the chicken breasts are great quality and are huge. That is the product that started the company. Bacon is excellent too. Pork tenderloins are great. BS chicken thighs were a little disappointing.
Great company, and very fair to work with. They have been running more promotions then they used too. So look for those.

Well tomorrow I am off to the Gun Shop in Pooler and will check out Zaycon now that I am registered.

Those ribs look mighty tasty!

Never heard of Zaycon but I registered to the site. Looks like they come around 1-2 months starting January 2017. Going to give them a try.
