Title: Reverse Seared Christmas Prime New York Strip Loin

I found a screaming deal at Costco the week before Christmas.  They had the Prime Grade Whole Top Loin on sale for $8.49 lb.  Then there was an additional $25 rebate at the register - Out-the-door price was $7.09 lb for Prime Top Loin  (NY Strip).

I cut nine 16oz steaks and vacuum sealed them (OK I grilled one and split it with my bride for lunch) and into the freezer.  The remaining HUNK (almost 7 pounds) was smoked on Christmas Day.  I smoked it on my pellet grill and used my new Amaz'n tube smoker for added smoke.  I took it off when the IT hit 134 degrees and let it rest for 20 mins tented in foil.  I then took it out to the Weber and seared it on all sides.

This was the first time smoking a Whole Top Loin and we really enjoyed it.
