Bought a whole chicken today while at Costco. Cut it in half seasoning it with some AP rub and Fine Swine & Bovine rub (really enjoy the flavor profile!). Our backyard smells delicious with this rub during the cook; neighbors got to be envious!. Using LumberJack cherry pellets. Starting off at 180 for first hour to get good smoke on it, then will bump to 275 to crisp up the skin. Will report back when done..

After pulling from the pit when IT hit 165. I let them rest 15 minutes before they were devoured...

The meat was so tender we were able to cut it with a fork. No brining whatsoever. Took about 2 1/2 hours to smoke.
