Title: My DCBE infrared smoker!

Your not going to believe this one but here it is and yes it smokes!!

I want introduce you to the new (well for me anyway) The Double Chef Big Easy

I have been working on an idea for some time on how to make a charcoal version of the Big Easy so I can compete in comps well here it is!
The chamber sits perfectly in the bottom of the Double  Chef smoker base

Tommy I have a Brinkman smoker grill that looks just like that except that it is propane. It was way too hard for me to keep it regulated with the water pan and all. Now I know that I don't need that water pan for moisture, and could use it as a heat sink. I got the 30' vertical CB smoker now and I love it. I jsut putit on before I got to bed and check it in the morning. Works great. Your right tho, low & slow is the way to go. Pammie ★*˚°。°

Pam,

Is that a Brinkman All-In-One?  I have a couple of those and I really like them.  I use them more for turkey frying and sea food boils (and for lighting my charcoal chimney) now, but I still like to smoke on one every once in a while.

Bill just bite the bullet and get one you know your going to anyway. 

After you get one I'll teach you how to do smoke added butts that taste like they were slow cooked and do them in 4 hrs.  8) 

I have cooked with mine in comps and took 7th in pulled pork and 6th in ribs it can be done. They were KCBS judges to boot  ;)
